Quick & Easy Vegan Mince Pies

There's no denying that these vegan friendly mince pies are probably the most easiest and quickest way of making your own at home. If you didn't already know, Jus Rol shortcrust pastry just so happens to be vegan which makes life incredibly easier. I've never attempted making my own pastry and why would I bother when this ticks all the boxes!? Sainsbury's own brand jars of mincemeat also have the vegan stamp of approval. These two ingredients are the main things you need to create your own mince pies but you may like to sprinkle some sugar on top of them too.  

The first step is to pre-heat your oven to 180 and allow time for your Jus Rol to defrost. 

Once it's nice and soft rub some flour over your worktop and start to roll the pastry out. The pastry does thicken slightly once it's cooked so don't make it too thick. I don't have all the right tools for cooking so as you can see I just used a small glass to cut circle shapes out and this will form the base of your mince pie. 

Once you have all your circles you then need to place them into baking tray and with your fingers gently mould them into the correct shape. I use this cupcake baking tray which is perfect for creating the right shape mince pies. You then just need to simply add a tablespoon of mincemeat into each pie.  Little word of advice - make sure you don't fill your pies right to the top as once they're in the oven the mincemeat bubbles up and can overflow. These ones in the photo below did just that! They were still edible but just looked a little messy. 

The next step is to use your remaining pastry to cut out your toppings. This time I decided to make heart shapes which I thought were quite cute! I also have some holly shaped cutters which make lovely Christmassy toppings. The choice is completely yours!

Once all your toppings are in place it's time to pop them in the oven. They usually take around 24 minutes but I check them at 20 minutes to be on the safe side and judge it from there. Your pastry should turn a slightly golden colour which will indicate that they're ready to come out from the oven. 

Once you have taken your mince pies out from the oven allow them to cool for about 20 minutes and then decorate them how you see fit. I decided to sprinkle mine with a bit of icing sugar which made them look very festive.

Then it's on to the fun part - tasting them! My husband really loved these mince pies and said they were leaps and bounds above shop bought ones which was lovely to hear. I would have to agree with him, they tasted really good and better than I could have imagined. It's just amazing that they contain no animal ingredients at all and still taste as good, if not better, than the all butter mince pies in the shops. They're also really great value with one packet of Jus Rol and two jars of mincemeat making approximately 25 mince pies.
