If you're Vegan and wasn't already aware that Lotus Biscoff biscuits and spread are Vegan friendly then you must have been living on another planet the last few months!
Biscoff have fast become a little bit of a phenomenon in the 'accidentally Vegan' world and best of all - they taste so good!
I have been avoiding baking recently as i've been trying to diet but this week the bug really caught up with me and with family visiting I thought it was the perfect time to rustle up some tasty Vegan treats.
I love any opportunity to promote delicious Vegan food to friends & family!
After a quick search online I was able to locate both an easy Vegan chocolate sponge recipe and also one for Biscoff butter icing. All of the ingredients were super easy to locate in my local supermarket so it was time to get baking!
I had some left over dark chocolate chips in my cupboard so decided to add them into my sponge mix just for some added chocolatey taste. I divided some of my mixture into small fairy cake cases and the rest into larger cupcake cases. I find this is a good idea as sometimes you just want a small bite of cake without going in for a full cupcake! The fairy cake size is also better for children.
Once my cakes were in the oven baking away it was time to get started on the Biscoff butter icing mix. I ended up using nearly a whole jar of Biscoff spread in my mixture as I initially didn't feel that it tasted strongly enough of the caramelised biscuit. I would suggest tasting your mixture and adding more if you feel that it is too subtle.
I also had to add quite a big splash of Alpro Soya Milk into my mix as it was a bit dry but that really worked well in softening it up into a decent butter icing consistency.
Once my cakes were out of the oven and cooled down it was time to decorate them which is always my most favourite part of the process!
With the larger cupcakes I cut the top off so that I could add another layer of icing inside the cupcake. I also finished them off with half a Biscoff biscuit on top!
With my smaller fairy cakes I crushed up a couple of Biscoff biscuits and sprinkled the crumbs over the cakes which added a really nice light crunch texture on top.
Considering these cakes were a mix up of different recipes, and a case of trial and error in certain places, I think they turned out so well!
After having licked so many spoons throughout the baking process I felt a little sickly by the end so I had to wait a few hours before I got around to trying one. But when I did they were SO good!
These recipes along with my own personal touches came together really well and these are by far one of the most delicious cakes I have ever made. I felt quite proud of myself and the family gave them a big thumbs up too!
The best thing about these cakes, aside from their taste, is that absolutely no animal ingredients are used in creating them which is kind of miraculous when you think about just how much traditional bakers rely on eggs, milk and butter! These are the ultimate cruelty free treat and I urge you all to experiment with some Vegan baking so you can appreciate just how easy it is and how delicious Vegan cakes really are.
Personally I don't think anyone would know the difference between one of these and a regular cupcake so if you can bake without any animal having suffered for it then why not!?

I like winning Biscoff products in their sweepstakes and requesting the cookies on Delta Airlines flights. But their products don't say Non-GMO, so they're not my first choice for buying.
