Tofu & Vegetable Stir Fry | Vegan



Stir fry's are one of my favourite meals to enjoy at home because they're just so quick and easy and they're a great way of packing in loads of vegetables into your diet. You can really mix this up to suit your tastes and add in whatever vegetables you fancy, there really aren't any rules! I tend to buy the ready to eat Cauldron tofu pieces because I still haven't perfected the cooking of tofu myself and I just find that this is the easiest way for me to enjoy a quick stir fry with minimal hassle. But again you may wish to add whatever tofu you prefer!


Ingredients 


Baby corn
Tenderstem broccoli
Mangetout
Mushrooms
Bamboo shoots
1/2 onion
1 green / red pepper
1 clove of garlic
Soy sauce
Cauldron tofu pieces / or tofu of choice
Wheat / rice noodles of choice
2 tbsp olive oil


Method


Heat the olive oil in a large wok / frying pan. 

Add the broccoli, baby corn, pepper and fry for a few minutes. 

Add the garlic, onion, mangetout, bamboo shoots and tofu pieces into the pan and add a drizzle of soy sauce. 

Cook for another few minutes before then adding in the noodles.

Wok and Roll!
