The arrival of the weekend always signals that it's time for an all day brunch in our house but this is a meal which can be enjoyed on any day and at any time of the week. In fact it also happens to be one of my favourite easy dinners to knock up after a long day. It's the ultimate in vegan comfort food!
Ingredients
2 slices of toast, bread of choice (I prefer Hovis Best of Both)
Baked Beans (I prefer Heinz)
Mushrooms
Linda McCartney sausages (in my opinion the best!)
Potato waffles (I buy Birds Eye ones)
Spinach
Avocado
Tomato
Method
Pre heat your oven to 180 / gas mark 6 and place your waffles and sausages on a baking tray inside for 15 minutes.
Peel and chop an avocado.
Pop your bread in a toaster for as long as you desire.
Chop the tomato in half, lightly brush the top with olive oil and place under the grill for approximately 4 minutes until browned on top.
In a pan fry the mushrooms for around 2 minutes in some olive oil before adding in the spinach for a further 2 minutes.
Place your baked beans into a bowl and microwave for 2 minutes.
Season with salt, pepper and sauce of choice.
