Easy Vegan Meal Plan



As it is World Vegan Month this November I wanted to put together a blog post which new vegans or anyone transitioning may find useful. I have decided to write down all of my current favourite easy vegan meals and collate them together in one place. Anyone who knows me will already be aware that I like to keep things nice and simple when it comes to eating vegan. I am not hugely talented in the kitchen and more often than not I tend to go for what's the most easiest to put together. I am however fortunate to have a husband who is more talented when it comes to cooking though and every now and then we do eat more fancy meals!

This is really just a reflection of the regular meals I tend to eat and enjoy at the moment. I am not claiming that they are super healthy or the best, and in any case everyones tastes are different. I do however have some years experience of trying and testing different vegan foods and I think I am in a good position to recommend some good easy meals to you all.  

Breakfast 



Alpro Soya Cherry Yoghurt with fresh fruit
Marmite / Marmalade on toast 
Porridge with with Alpro Soya Light milk or Almond milk and blueberries on top
Tesco Free From Choco Snaps (great if you miss Coco Pops!)
Mixed fruit smoothie
If we're feeling naughty - Jus Rol Pan Au Chocolat's



Mid Morning Snack




Banana / Grapes / Apple
Pulsin protein bar
Handful of cashew nuts
Cup of tea & two Lotus Biscoff biscuits
The Protein Ball Co. protein balls
Waitrose Essential hot cross bun
Pitta bread & hummus
Hippeas crisps

Lunch



Avocado on toast 
Falafel & hummus in pitta bread with a side salad
Avocado salad sandwich
Whole earth crunchy peanut butter on toast
Beans on toast
Sometimes we'll get a sandwich out - favourites of the moment are the Boots vegan Christmas one and the Coop vegan special. Pret also have some great lunch options for vegans!


Afternoon Snack


I will usually pick something I haven't already had from the mid morning snack list! 

Dinner



Linda McCartney sausages & beans on top of a jacket potato
Tofu & vegetable stir fry 
Linda McCartney pie & mashed potato with peas / veg of choice
Tagliatelle with tomato passata & VBites meat balls
Linda McCartney Sausage Roll, beans, potato waffles & mushrooms
Roast dinner with lots of roasted vegetables, Paxo sage & onion stuffing & of course roast potatoes!
A rainbow bowl - a mix of veggies, quinoa, beans, lentils, salad - whatever takes your fancy!
Fry's burger with potato wedges
Pasta with sweetcorn & chopped cucumber in a light vegan mayonnaise dressing
Vegetable curry (usually cooked from scratch by the husband!)
Mixed bean chilli with rice (again, one of the husbands specials!)
Vegan pizza - we usually just buy the Napolina bases, add tomato passata or puree & top with veg


Evening Snack / Treat



Freeze Pop (I have an addiction to these at the moment!)
Tea & biscuits - faves include Biscoff, Oreos & the miniature bag of Foxes cookies
Dairy Free Ben & Jerry's 
A few squares of Bournville (but Vego is the best chocolate!)
Livia's Kitchen Biccy Boms (they are indeed the bomb!)


I think this is quite a true reflection of my favourite things to eat at the moment but my list does tend to change depending on the time of year and different phases we go through with food. But hopefully you can see from this that eating vegan isn't really that difficult, it just takes time to find out and discover the favourite foods you like. This list also isn't exclusive and of course there are an incredible amount of different products and choices at the moment.

I am hoping to put together some full recipes soon featuring my husbands meals which he cooks from scratch as they really are so good. If there's anything else you'd like to see on the blog just let me know!

  2. This is such a great reflection on vegan eats. So often people overcomplicate these with elaborate smoothie bowls and hard to find ingredients but this is realistic and helpful. I also really want to try those Biccy Boms!!

  3. I love this! All the food looks so tasty and I'm going to try out some of these recipes, not sure if you can get any Linda McCartney stuff where I live though sadly.
